Although the Scots will strongly contest, it is generally regarded that the Irish were the first to distil whiskey. The first legal distillery was officially licensed way back in 1608, and the country once boasted hundreds of others. Today only three remain: Bushmills, Cooley and Midleton; but Irish whiskey is entering a period of great growth and consumers are returning in droves to their signature smooth and fruity spirit.
